If pumpkins are in season, there is absolutely no reason to go for canned products.

Not only does fresh pumpkin puree taste better, but it also happens to be healthier and free of any additives or preservatives.

You can also tinker with the recipe and add a unique flavor to the mix.

For instance, you can experiment with nutmeg, ginger, cloves or cinnamon, etc.

I found that having a neutral-tasting puree was best for my purposes since I wanted to incorporate it into both sweet and salty recipes.

But if you are using it for a specific recipe go ahead and add your spices directly to the puree.

While the store life of canned products is admittedly longer, your homemade keto pumpkin puree can last quite a while if stored in the refrigerator ( for a week ) or frozen for up to 3 months.

Keto Pumpkin Puree

Equipment

  • power blender

Ingredients
  

  • 8-10 lb pumpkin
  • 1/2 tsp salt

Instructions
 

  • Preheat the oven to 400°F.
  • Remove the stem of the pumpkin and slice it in half.
  • Scoop the seed and fiber with a metal spoon or ice cream scoop.
  • Sprinkle the pumpkin flesh with salt and place the halves, skin side up, on parchment paper-lined baking sheets.
  • Roast until you can easily pierce through the skin with a knife or for 40 minutes.
  • Let cool completely for 1 hr before scooping the flesh from the skin into a blender or food processor. If using a food processor, process until fully smooth for about 4 minutes.

Notes

You can store it in the fridge for up to 1 week or in the freezer for 3 months.
