This keto chocolate chip cookie recipe makes cookies with the perfect crispy edges and the soft centers that I love. The best part of this recipe is the carb count!

Only 1.6 net carbs
per cookie! You know it’s always hard to have just one cookie and with these keto chocolate chip cookies it’s possible to grab some more without breaking your diet. 

After many attempts to make a keto chocolate chip cookie recipe that my boyfriend and I enjoy, this one takes the gold! He LOVED it so much that he asked me “can you make this every week?”.

Keto Chocolate Chip Cookie Recipe Ingredients

  • 1/2 cup unsalted butter (1 stick)

  • 3/4 cup granular monkfruit sweetener 

  • 1 tsp vanilla extract

  • 1 large egg 

  • 1 1/2 cup almond flour

  • 1/2 tsp baking powder

  • 1/2 tsp xantham gum (optional)

  • 1 1/2  tsp salt

  • 1/3 cup sugar free chocolate chips or chopped chocolate bar

Make sure the butter is melted when adding the almond flour. If the butter is not melted, the ingredients will not combine well and the cookies won’t spread in the oven.

Can I substitute the sweetener?

I recommend using granular monkfruit or pure erythritol. Using a liquid sweetener will make your keto chocolate chip cookie rock hard.

Give the cookies plenty of space in the baking sheet to expand, as the temperature rises the cookies will spread more than regular cookies.

If they are not spreading after being in the oven for 5 minutes, open the oven and flatten them with a fork. It this happens, you might have put too much almond flour.

If your cookies are not flattening after 5 minutes in the oven, you can manually press them down with a fork. You could also shape with any shape you want before going into the oven. Be creative! 

Once they have reached 12 minutes in the oven and the edges are brown, remove from the oven. They might look underdone at this point but they’ll harden when cooled. That will give you the soft center that we all love.

Ingredients
  

  • ½ cup unsalted butter (1 stick)
  • ¾ cup granular monkfruit sweetener
  • 1 tsp vanilla extract
  • 1 large egg
  • cup almond flour
  • ½ tsp baking powder
  • ½ tsp xantham gum (optional)
  • 1 ½ tsp salt
  • cup sugar free chocolate chips or chopped chocolate

Instructions
 

  • Preheat a fan forced oven to 360°F.
  • Melt the butter in the microwave. Place the melted butter and monkfruit in a mixing bowl and beat until combined. Add the vanilla and egg, whisk until well combined.

  • Add the almond flour, baking powder, xantham gum and salt. Whisk one more time until the are no almond flour lumps.
  • Add in the chocolate chips and combine with a silicone spatula.

  • Use a small cookie scoop to divide and shape the dough into 15 portions and place on a lined baking tray. Bake for 10-12 minutes at 360F. Once the edges are brown, remove from the oven. They might look underdone at this point but they’ll harden when cooled.

Notes

If your cookies are not flattening after 5 minutes in the oven, you can manually press them down with a fork.
Store the keto chocolate chip cookies in an air tight container for up to 7 days.
