My Love Affair With Chocolate Chip Mini Muffins
You know of my love affair with chocolate and everything that has chocolate, so you understand how I could have eaten a million store bought chocolate muffins when I was in high school and didn’t know any better.
I mean they were chocolate muffins! Who was I to say no, right?
They were sweet, convenient, and delicious. Sure they were full of sugar and god knows what else, but heck. I’m just glad that part of my life is over and done with!
And happy that I’ve found ways to carry on eating the chocolate muffins, so to speak, without filling my body of harmful ingredients.
Of course, my toxic love affair with store bought chocolate muffins has stopped. I’m now in a newly healthy and glowing relationship with my low carb choc chip muffins.
My keto muffins are still sweet, delicious and convenient, but they’re in no way harmful to my body.
Why Do I Do Keto?
My journey to self-love has taught me to value everything about me, and that includes my body. I love my body. And I want it to be healthier.
I don’t aspire to be thin like runway models, I don’t see health in that anymore. I want to be fit, strong and healthy by giving my body the nutrients it needs.
This is why I’m on keto. I didn’t do it because of peer pressure, or bandwagon.
I did it for me. And I knew I could make it work better if I wasn’t constantly thinking about eating a ton of my favorite, unhealthy food.
Obsessing about them while avoiding them can only work so much.
My solution was to make my own keto version of my favorite sweets.
As my toughest critic I decided to embark on a journey to making everything taste just as good as I remember, I just couldn’t compromise on the flavor.
So I didn’t. Instead of listening to other people put limits on my abilities, I listened to myself, and tested my own limits.
Luckily for me, I did it in this day and age of advancement. I had the usual roadblocks, of course but I didn’t let it stop me. I persevered.
And if at the end of the line, all I have are these ketogenic muffin recipes? I have to say I succeeded! They are perfectly moist and full of chocolate!
My All Time Favorite Keto Chocolate
I never skimp on my chocolate, especially when it’s from my all time favorite keto chocolate brand: Choc Zero.
Check out their selection and stock up on some delicious keto caramel, chocolate syrup, and hazelnut spread. I can’t get enough of their milk chocolate chips which is why my keto muffins are absolutely filled with chocolate.
These ketogenic muffin recipes are a revelation. I’m pretty sure that if I’m suddenly stuck in The Walking Dead (which I’m currently binging), and all I had were these low carb choc chip muffins, I would be able to survive.
But if all I had were those convenient store bought chocolate muffins, I’d be a zombie by now. See the difference?
Grab And Go Breakfast
This almond flour muffins chocolate chip recipe is something that we can make in advance, store, and then take out for breakfast the next day.
Especially on busy days, when we can barely get by because we have so much to do, and all we can afford for meals, especially breakfast, is a New York minute.
Breakfast being such a crucial meal in a day, I don’t think we can afford to skip it (unless we’re doing intermittent fasting).
A couple of grab and go keto chocolate chip muffin will go a long way towards making your day look a bit brighter. It doesn’t matter if it’s raining, either.
These ketogenic muffin recipes are here to make our lives easier, fuller, and brighter. And if you don’t skimp on the details and the ingredients, I’m sure you’ll do well.
Take me, for example. I have a full-time teaching job, plus I have this keto food blogging on the side. And it’s not all cooking, either.
It’s creating the recipe, perfecting the recipe, finding the perfect ingredients, experimenting, carb-counting, writing, etc. It’s a full-time business.
But I can’t walk out on my full-time gig teaching art at highschool, either.
Do I give one up? Do I surrender to pressure? No. (Maybe a couple of meltdowns here and there) but when life presents us with a challenge, we do our best to rise to it!
To me, life is supposed to be lived. And we can’t live properly unless we’re able to deal with the challenges that come with adulthood.
If running away was the answer, many more people will be crying in a corner today. And it still wouldn’t solve anything.
So we get up, and go on. And if along the way, life tosses us another challenge, we find a way to make everything work out.
Face Your Challenges
These ketogenic muffin recipes help me deal with my challenges.
Especially the challenge of time. I could never find time in the morning to make a delicious breakfast and now I’m loving my mornings with this grab and go meal.
So if I know one thing, it’s that this almond flour muffins chocolate chip recipe can only improve your life just like it did to mine.
It’ll give you enough energy to face the day (whatever form it takes), and then some; it’ll liven up the dreariest day with its sweetness and fullness; it’ll help you organize a busy day better with it’s convenience; and it’ll make you cheerful with its freshness (even if you made it yesterday and just throw it in the microwave in the morning).
These keto muffins make the easiest and best breakfast of champions (because that’s what we are!).
So let’s keep facing everything head on to the best of our abilities, winning, and eating keto muffins!
